Up your Rotisserie Chicken game with this French mushrooms wine sauce

Getting a Rotisserie chicken from the supermarkets (or from Costco) has been a lifesaver for many families… It’s delicious, affordable and makes a wholesome meal with a side of vegetables.

If you are in the mood for a French-style meal, here’s a great rustic recipe using the store-bought Rotisserie chicken as a starting point… It’s served with a delicious French wine sauce with mushrooms and a side of fragrant tomato rice.

Traditionally, button or cremini mushrooms are used for the recipe, but why not use a medley of mushrooms for a more varied texture? This is a rustic and lighter version of a French gravy, without any cream, but it’s still wonderfully flavorful and perfect with the roast chicken.

French Mushrooms and Wine Sauce Recipe

Ingredients

For 4 servings – 10 minutes preparation and 15 minutes cooking to prepare the sauce.

  • 1 store-bought Rotisserie chicken – Cut into 4 portions
  • 4 cups of mushrooms (white or cremini, or assorted mushrooms)
  • 1 large shallots, finely sliced
  • 4 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 2 to 3 tablespoon butter
  • 2 to 3 tablespoon All-purpose flour
  • a few sprigs of Tarragon or Thyme
  • Salt and pepper, to taste

Method

  • Wash and dry the mushrooms, slice them

Wash and dry the mushrooms medley
  • In frying pan, add the olive oil and sauté the shallots and garlic till fragrant, add the sliced mushrooms, stir fry for 3 to 4 minutes.

Saute the shallots, garlic and mushrooms
  • Add the white wine and chicken broth and herbs, heat till boiling and reduce heat to medium

Add the tarragon or thyme to the frying pan

Cook for couple of minutes, lower the heat and simmer

EASY TIP For Beurre Manié:

Meanwhile, prepare the “Beurre manié) put the butter in a microwave-safe bowl, heat for 1 to 2 minutes till melted. Add the flour and mix well. The ratio of butter to flour is 1:1.

Beurre manié: Equal part of butter and flour

You will get a paste which is used to thicken the sauce. Mix by spoonful into the simmering sauce to thicken it to the desired consistency. Add salt and pepper according to your taste (always taste and adjust the seasoning at the end of cooking). Since the Rotisserie chicken is already seasoned, make sure that the sauce is not too salty…

Beurre manie

Pour the sauce on top of the Rotisserie chicken and serve with a side of salad, crusty French bread or rice.
