This method to cook salmon is effortless with no mess! There’s no need to marinate the salmon, and you can use any side vegetables that you have in your fridge, and wrap everything together in individual foil package and bake in the oven or toaster oven for about 15 minutes, and voilà! Dinner is served!
You only need to mix the delicious sauce which is sweet, salty and only slightly spicy…
Ingredients
2 servings
- 2 salmon fillets, deboned and cleaned
- Some vegetables (here I use green beans and bell peppers, but you can pick any available vegetables that could cook in around 15 minutes like asparagus, mushrooms, onions, cabbage, broccoli, tomatoes etc.)
- a little olive oil
- salt and pepper
The Sauce
- 1 tablespoon reduced sodium soy sauce
- 2 teaspoons fish sauce
- 1 tablespoon Thai sweet Chili sauce
- 1 teaspoon minced garlic
Method
- Sprinkle a little olive oil over the salmon fillets and the vegetables. Season with salt and pepper
- Mix the sauce ingredients
- Preheat the oven or toaster oven to 400 F (205 C)
- Put 1 salmon fillet with some vegetables in a piece of foil. Repeat with the other salmon fillet.
- Scoop the sauce over the salmon and vegetables
- Fold the edges of the foil to make a small parcel
- Put in the preheated oven or toaster oven for 15 minutes
- Serve immediately on its own or with steamed rice.
