Make your own tasty vegan Poké rice bowl

Make your own tasty vegetarian Poké rice bowl

Poké is a Hawaiian rice bowl, typically topped with raw fish like tuna or salmon and assorted vegetables. Here’s a tasty vegan Poke rice bowl version. It’s so healthy and easy to put together and you could use your favorite raw vegetables or what you can find in your fridge or pantry.

For the vegan version, I have used Cooked Beets instead of tuna, and it’s so light, delicious and healthy! For vegetables, I have added what’s available at home like cucumber, avocado and Macadamia nuts for extra crunch. Shredded carrots, edamame, pickled ginger can also make a delicious poké… What’s not to love in this easy, healthy and versatile recipe, right?

The poké sauce is also versatile and could be made according to your own preferences. Instead of honey, you could use sugar, although honey does add a subtle sweet touch. You can substitute the rice vinegar with the juice of half a lemon with its zest. If you don’t have wasabi on hand, you could use a pinch of minced chili, but wasabi does enhance the flavor but it’s extremely spicy so if you are not used to the taste, use just a little bit first. If you prefer a creamier sauce, add my favorite wasabi mayo! The Ingredients

4 servings

1 pack cooked and peeled beets

2 avocados, cubed

2 cups cucumber, cubed

1/2 cup macadamia nuts

Spicy poké sauce

Serves 4

1 tsp honey

1 tsp finely grated ginger

4 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar (or juice of 1/2 lemon and grated zest)

1 tsp finely chopped green onion

1 dollop of wasabi or 2 tablespoons of wasabi mayo

Garnish

Cooked brown rice

Radish sprouts

Toasted sesame seeds (optional)

Instructions

Mix everything together and mix with the beetroot, avocado and cucumber toppings.

Scoop over hot steamed brown rice and garnish with Radish Sprouts and toasted sesame seeds.
