I’m so happy to share this utterly delicious Short Rib Tacos recipe that’s bursting with Mexican spices and the meat is so tender but not mushy. You could follow use other cuts of beef like brisket or beef shanks, but the short ribs really elevate the dish.
Making this dish with instant pot is so quick and easy.

This dish should be served with warm corn or flour tortillas, and any toppings and sauces that your family likes. Here I serve it with guacamole, spicy salsa, sour cream, shredded Mexican cheeses, shredded cabbage or lettuce and cilantro.
Short Rib Tacos in Instant Pot

Ingredients
- 2 lbs Beef short ribs (boneless or bone-in)
- 2 tbsp oil
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp ground cumin
- 1 tsp each salt and pepper
- 1/2 cup tomatillo salsa (store bought)
- 1/2 cup red onion, chopped
Garnish, to serve
- 12 corn or flour tortillas (warmed up)
- cooking spray
- 1/2 cup salsa
- 1/2 cup guacamole (or avocado dipping sauce)
- 1/2 cup shredded Mexican cheese blend
- 1/2 cup Mexican sour cream (or regular sour cream)
- 1/2 cup chopped cilantro
- 2 limes cut in wedges
Instructions
- Marinate the beef short ribs with the spices (chili, garlic, onion powders, red pepper flakes, oregano, paprika, cumin, salt & pepper for about 30 minutes
- Set the Instant Pot on Saute function, add oil to pot to heat about 2 minutes, add the chopped onion, then the beef. Brown the beef on all sides. Add the tomatillo salsa. Mix and scrape bottom of pan.
- Close and lock the lid. Turn the steam knob to Seal position. Select Manual Pressure cook setting on HIGH for 25 minutes (it will take around 12 minutes to reach the pressure before cooking).
- In the meantime, prepare the tortillas. Spray both sides of the tortillas with cooking oil. Heat a nonstick skillet over medium high. Cook the tortilla for around 15 seconds on each side. Repeat with the remaining tortillas.
- Prepare the sauces and garnishes and put in separate bowls.
- When cooking is done. Carefully manually release the steam knob to venting position and let the steam to fully release. This would take couple of minutes. The float valve will drop. Remove the lid.
- Remove the beef, shred it if you wish, or cut into chunks. Check the seasoning and add salt and pepper according to taste. Discard the cooking liquid.
- Serve the beef short ribs with the garnishes and warm tortillas. Around 3 tortillas per person.
