I just love making fun Halloween theme food and most years we throw a Halloween party with Scary Food, Gloulish Cocktails and Devilish live music!
But nothing is the same this year, my Halloween menu is planned around simple dishes with lots of short cuts… just need a bit of creativity!
Here’s my original recipe for this scary Halloween Mummy Salmon Spinach “en croute”, or wrapped in puff pastry. Not only it looks scary, it’s super easy to prepare and is delicious!
I use a store-bought frozen puff pastry sheet (Defrost overnight in the refrigerator), 1 whole filet of wild-caught salmon (make sure it’s deboned), 1 box of frozen spinach in light cream sauce (available at most supermarkets).
- Lay the puff pastry flat on a sheet of baking paper
- Preheat oven 375 degrees F (190 C)
- Microwave the frozen spinach for 3 minutes (as it will be further baked).
- Spread the spinach in the center of the puff pastry sheet, lengthwise
- Place the salmon on top of the spinach, sprinkle salt & pepper on top
6. Cut strips of pastry along the side of the salmon (see picture)
7. Fold the strips of pastry over the salmon (see picture). It should be random to create the mummy wrapping
8. Leave a little gap at the top, which will be the upper part of the Mummy’s face. Brush some egg yolk all over the pastry. With a fork, pierce lightly all over the pastry
9. Bake in the oven lower center shelf for 35 to 40 minutes (depending on your oven, the pastry should be golden brown).
10. Remove from oven, add eyes if you wish, for decoration
11. Cut into slices and serve warm or at room temperature
