My daughter-in-law garden is flourishing with fresh herbs, vegetables and flowers and I’m the lucky recipient of this bounty.

The best way to use these fresh herbs and vegetables is to make fresh summer rolls. This recipe is for Fresh Duck Rolls, but you can substitute with any protein such as Prawns, Chicken, Beef, Pork or Tofu for a vegetarian meal. To make 12 rolls, you would need around 1/2 a roast duck (store bought) or 2 duck legs or 2 duck breasts.

Here, I’m using specialty Dragon Fruit purple rice paper (which you can buy from Amazon here) but regular rice paper would also do. They can be found in most Asian stores and some supermarkets may carry them.

These rolls are so fresh and delicious, it’s better to eat them right away.  If you are making these ahead of time, make sure to cover the rolls with cling wrap or a damp towel so they won’t dry out.

For the herbs, you can use any combination of available herbs, but make sure to include lettuce, cucumber (for crunch), mango or cantaloupe (for a touch of sweetness).

Fresh Duck Rolls

Roast duck rolled in rice paper with herbs and vegetable

Ingredients
  

  • 1/2 Roast Duck or 2 legs or 2 breasts
  • 2 Persian Cucumbers cut into 2" sticks
  • 1 Mango, should be firm, cut into 2" sticks
  • 12 small lettuce leaves or 6 large ones divided in 2
  • 1/2 cup coriander
  • 1/2 cup fresh mint
  • 1/2 cup basil
  • 1/2 cup Shiso leaves
  • 1 pack Rice Paper (need 12 sheets)

Instructions
 

  • Wash and spin dry the lettuce and herbs
  • Cut the meat, cucumber and mango into 2" sticks
  • Set a bowl of water. Dip one rice paper sheet into the water and lay flat on a mat (or chopping board)

  • Lay the vegetable and meat on the rice paper

  • Fold one end of the rice paper over the vegetable and meat, and fold neatly the sides over

  • Roll tightly to form a neat roll

Fresh duck rolls with mango and herbs

Since the roast duck is already seasoned, these rolls could be eaten right away. But if you prefer to have a dip, use the Nuoc Cham recipe from this post.
