Fresh Duck Rolls

Roast duck rolled in rice paper with herbs and vegetable

Ingredients
  

  • 1/2 Roast Duck or 2 legs or 2 breasts
  • 2 Persian Cucumbers cut into 2" sticks
  • 1 Mango, should be firm, cut into 2" sticks
  • 12 small lettuce leaves or 6 large ones divided in 2
  • 1/2 cup coriander
  • 1/2 cup fresh mint
  • 1/2 cup basil
  • 1/2 cup Shiso leaves
  • 1 pack Rice Paper (need 12 sheets)

Method
 

  1. Wash and spin dry the lettuce and herbs
  2. Cut the meat, cucumber and mango into 2" sticks
  3. Set a bowl of water. Dip one rice paper sheet into the water and lay flat on a mat (or chopping board)

  4. Lay the vegetable and meat on the rice paper

  5. Fold one end of the rice paper over the vegetable and meat, and fold neatly the sides over

  6. Roll tightly to form a neat roll
