Here are some fun and semi home-made Halloween food ideas that you can play with and adapt according to your tastes!
Hair-raising Appetizers
Everybody loves spring rolls, so I came up with the idea of turning spring rolls into Witches Fingers. Here I’m using store-bought frozen lumpias that are Filipino-style egg rolls. There are many types of fillings available, vegetarian, chicken or shrimp. The frozen lumpias are deep fried, then use a little ketchup as glue to attach a piece of slivered almond as the witches’ fingers’ nail. If you can’t find lumpias, you could also use taquitos or other types of spring rolls.
Have you ever tried Chinese Tea Eggs? You can find them in the refrigerated compartment of Asian stores and they look really creepy, don’t you agree? That’s why I find them perfect for Halloween! You can also make them at home. Brew some strong tea, and soak in it the hard boiled eggs in their shell (crack the shell all over so the tea can seep into the eggs) for at least a day.
To serve, remove the shell, display on a plate. You can squeeze a little ketchup or chili sauce on top to make it more blood-curdling…
Spine-Chilling Entrees
This “Mummy” Salmon and Spinach in Puff Pastry could be served either as appetizer or main. It’s so easy to make and delicious. Here’s my original recipe.
I also love to serve BBQ ribs and sausages, to make them look like a gruesome skeleton, you would need some props like a plastic skull and arms / feet bones.
For the ribs, I have used a Vietnamese marinade made with finely chopped lemongrass and shallots, fish sauce, oyster sauce and honey. But you can use any type of BBQ spare ribs.
Vietnamese Spareribs Recipe:
- 1 rack of spare ribs
- Marinade: 1 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp sweet soy sauce, 1 tbsp honey, 1/2 cup finely minced lemongrass, 1/2 cup finely minced shallots. Marinate for an hour or preferably overnight.
- Preheat oven to 300 F (150 C) – Bake the ribs bone side down for 1-1/2 hour. This step can be made the day before.
- An hour before serving, preheat oven to 450 F (230 C). Flip the ribs over, and broil for 15 minutes.
For the entrails, you can use any type of sausages. Since this is an Asian theme BBQ, I have used store-bought Longaniza (Filipino) sausages, which are smoked and fully cooked, and only need to be re-heated. You could use any type of cocktail sausages as well!
I serve this spine chilling “skeleton” BBQ with black sticky rice also known as “Forbidden Rice”, how appropriate for the Halloween theme! It’s widely available in Asian stores or can be ordered via Amazon.
A tip when using black sticky rice, always add some regular white sticky rice and mix together and rinse well before cooking, to improve the cooked rice texture. The ratio can be 2/3 black sticky rice to 1/3 white sticky rice. If using a rice cooker, as a rule of thumb, for each cup of uncooked sticky rice, add 1/2 cup of water (but please adjust according to your own rice cooker model).
