German Apple Cake or Apfelkuchen

Equipment

Ingredients
  

  • 8 tbsp Butter (softened)
  • 9 tbsp Granulated Sugar (or use less if you prefer less sweet. I used 6 tablespoons)
  • 3 Eggs
  • pinch Salt
  • 1-2/3 cup All Purpose Flour
  • 3 Medium Apples
  • 1 tbsp Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 2 tsp Baking Powder

Instructions
 

  • Whisk the softened butter and the sugar in a mixing bowl till creamy
  • Add the eggs one by one to mix till smooth
  • Lightly mix together the dry ingredients: salt, flour, baking powder, and gradually add to the mixing bowl, preferably half first, blend, then the other half, mix till the batter is smooth.
  • While the batter is resting, peel the apples (or leave the skin on, up to you) and slice them.
  • Heat the oven to 350 F or 180 C
  • Grease a 9" springform mold, and line the bottom with baking paper.
    Pour the batter into the mold, and smooth the top evenly
  • Display the apples slices on top of the batter
  • Sprinkle the brown sugar mixed with the cinnamon over the apples and batter
  • Bake the cake at the lower shelf of the oven for 40 minutes until the top is golden. To check if the inside is done, insert a small knife or wooden stick into the cake, if it comes out clean, the cake is baked through.

Apfelkuchen
This is a delicious and easy cake. My family has praised how good it tastes, yet it's simple to make and does not require any appliance or special equipment.
Unlike most cakes, the recipe is very forgiving, the measurements do not have to be exact.
You can use more or less sugar depending on your preference.
The eggs could be medium or large.
Any type of apples could be used, you can use sour apples or sweeter ones.
The cake can be served warm or at room temperature. If you wish, you could serve this apple cake on its own, or with whipped cream.
