The Soup
To start with, here’s a simple yet absolutely delicious pea and spinach soup recipe, shared by my sister Nhumy from New York. It’s easy to prepare and tastes fresh and light, as no cream or dairy is added.

The Main
This roast lamb practically makes itself. You only need to marinate the lamb with some spices, olive oil, lime juice and honey, and roast it in the oven at 300 F (20 to 25 minutes per lb / 450 g). Here’s the “How to roast lamb the lazy way” recipe.
What makes this roast lamb really special is the Aji Verde spicy green sauce. It’s tangy, a little spicy and is a perfect accompaniment to any grilled meat or roasts. Here’s an authentic Peruvian Aji Verde sauce recipe. You can refrigerate the Aji Verde sauce in a covered container for a couple of days (it’s also a great dip for leftovers or for chips and nachos!).
Sweet Ending
For dessert, you can cheat a little bit and assemble a tasting sample of store-bought desserts, in green color of course! Here are a few ideas: Pistachio or Mint ice cream, Matcha (Green Tea) cake, Mint Chocolate Chip Cookies, Green grapes etc.
Here, I have put together a green theme dessert plate with Green Tea Mochi Donuts, Green Tea Mochi Ice Cream and sliced fresh kiwis. The tartness of the kiwis balances well with the sweet mochi donut. The frozen mochi ice cream refreshes and cleanses the palate. I have added a handful of pistachios for crunchiness.
