Speculoos Tiramisu

My lovely niece Alix from Geneva has shared this delicious Speculoos Tiramisu recipe which is a hit with family and friends.

It looks so fresh and appetizing, don’t you want to dip your spoon right into it?

Is it safe to consume raw eggs?

According to this article, for years both egg whites and yolks have been eaten raw. Besides being high in nutritional value, raw egg yolks and whites are super gentle on the digestive system and as long as the egg is good quality and fresh they are 100% safe to eat. If you are wondering, “What about salmonella?” fresh raw eggs from a quality source are even less likely to contain salmonella. Studies show only 1 in 30,000 eggs even has a salmonella problem. Healthy chickens with lots of sun exposure aren’t going have much salmonella to pass on to their eggs. 

But please use your own judgment and common sense.

Fresh Collection Of Gift Baskets

Ingredients for 5 to 6 portions:

¬ 400 gr (14 oz) of mascarpone

¬ 250 gr (9 oz) of speculoos

¬ 4 tablespoons of sugar

¬ 4 eggs

¬ 1 sachet of sugared vanilla

¬ unsweetened cacao powder

¬ one cup of coffee   (this is not the US measuring cup but literally a drinking cup of coffee)

¬ Prepare a cup of coffee and let it cool in a small bowl or shallow plate. You can add a tablespoon of amaretto or rhum if you like

¬ Separate the egg whites from the yolks. In a bowl, whisk energetically the yolks with the sugar and sugared vanilla until the mixture gets paler.

¬ Add the mascarpone to the mixture and continue to whisk in order to obtain a very homogeneous cream

¬ In another bowl, whisk the egg whites with a pinch of salt until they are firm and form peaks.

¬ Gently fold the egg whites beaten in snow into the mascarpone mixture

¬ soak the speculoos in coffee, crumble them in the bottom of your glass.

¬ add a layer of the mascarpone mixture¬ add another layer of soaked crumbled speculoos and another layer of the mascarpone mixture (in total : 2 layers of speculoos and 2 layers of the mascarpone mixture)

¬ cover your tiramisu with plastic film and put in the refrigerator for minimum 12 hours and overnight is good too

¬ just before serving, sprinkle your tiramisu with cocoa using a small tea strainer. You can add crumbled speculoos on top for an extra treat!
