Every time I visit Guido’s family in Germany, his mom would bake my favorite dessert Pflaume tart, served freshly whipped cream, it’s pure heaven!
Due to Covid-19, we are not sure when to visit Germany again, so I have to bake my own Pflaumekuchen. There are many recipes but I picked this one, as it’s easy and simple. You could use other fruits instead of plum, such as peach, nectarine, apricots or apples. Pick fruits that would hold their shape during baking.
It’s a delicious cake with a streusel topping that could be enjoyed as dessert, or in the morning with coffee or during afternoon tea… If you feel sinful, serve it with whipped cream or vanilla ice cream.
German Plum Cake
Equipment
- Springform Cake pan, Stand Mixer (optional)
Ingredients
- 1.5 lb 680 g. Plums, pitted and quartered
Batter
- 1 cup all-purpose flour
- 3/4 cup sugar
- 1/2 cup unsalted butter, room temperature
- 1 tsp baking powder
- 1 large eggs
- 1 tsp vanilla extract
- 1/2 tsp lemon zest
Streusel Topping
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 tsp cinnamon
- 1/2 cup unsalted butter, room temperature
Instructions
- Preheat oven to 350 degrees F (177C). Grease a 9-inch springform cake pan – Line with baking paper.
- In the bowl of a stand mixer (paddle attachment), mix flour, baking powder. Add sugar, vanilla extract, lemon zest, butter and eggs and beat on low speed until combined, then increase speed to medium for 2 minutes until smooth and creamy. Do not overmix
- Spread the thick batter evenly in the prepared cake pan. Place the plums on top.
- Streusel topping: In a bowl, combine flour, sugar, cinnamon. Add the soft butter and mix together with a silicone paddle until combined, with a coarse crumble.
- With your fingers, sprinkle the Streusel crumbs evenly over the fruits and batter.
- Bake for 50 minutes until the top is golden. Remove and let cool for 10 minutes before removing the outer ring from the springform pan. Can be enjoyed warm or at room temperature.
