We love Peruvian food, especially grilled chicken with Aji Verde Sauce. I love the vivid green color and the spicy and tangy taste.
Aji Verde is a Peruvian spicy green sauce, a little garlicky and bursting with the fresh cilantro and lime juice flavors. This sauce is perfect for any grilled meat or seafood or can also be served as a dip for chips and nachos.
Here’s an authentic Peruvian recipe. Although some regions in Peru do not add lime juice, but I think it adds freshness.
Appliance
You’ll need a food processor, blender or Magic Bullet.
Ingredients
- 1 cup sour cream or light mayo, in a bowl
- 1 large jalapeno, finely chopped (remove seeds if you prefer less spicy)
- 3 cloves garlic, finely minced
- 1 bunch fresh cilantro (remove the stems, and roughly chop)
- 1 tablespoon fresh lime juice
Instructions
- Put the garlic and jalapeño in a food processor or Magic Bullet and blend.
- Add the cilantro by handful, blend
- Add 2 tablespoons of sour cream or light mayo, and lime juice. Blend well.
- Scoop the blended mixture and add to the bowl with remaining sour cream or light mayo.
Note that the cilantro will be blended, but the mixture is not super smooth, which is fine.
Any leftover can be put in a covered container and refrigerated for couple of days. Use it as a dip or sauce for any grilled meat or roasts.
I have served it with roast lamb for St Patrick’s Day, and it was perfect!
