I have invited my beautiful niece from Geneva to be a guest blogger and share her great recipe for Pains au Sucre, those mouthwatering buttery and sugary bread rolls.

I made these “Pains au sucre” for the first time during the first quarantine back in March and my mom and dad loved them so much that I now bake them almost once a month. I also made them for my mom’s birthday, they’re that special and delicious!
The “Pains au sucre” are very simple to make and taste the same as those buttery sugared brioches from the bakery but you can make a lot more for way less.
Ingredients
⁃ 500gr (17.5 oz) of all purpose flour
⁃ 20cl (6.7 fl.oz) of Milk
⁃ 7gr (0.25 oz) of vanilla sugar or a teaspoon of vanilla extract
⁃ 2 eggs and one egg yolk
⁃ 7gr (0.25 oz) of baking yeast (powder)
⁃ 80 gr (2.8 oz) of sugar
⁃ 125gr (4.4 oz) of butter
⁃ 1 teaspoon of salt
⁃ Pearl sugar or chocolate chip
Preparation
In a large mixing bowl :
1. Put all the dry ingredients : flour, sugar, baking yeast, vanilla sugar
2. Mix all up
3. Put the 2 whole eggs
4. Add the milk
5. Mix (I hand mix everything but if you have a food processor you can use it)
6. Add the salt
7. Mix/knead
8. Add the butter but slowly, not all the butter at once, add by small pieces gradually until you have a smooth dough
9. Cover your dough with a clean towel and let it rise at room temperature for two hours minimum
10. After the 2 hours, degas the dough (Make a fist with your hand and push it gently and firmly into the center of the puffy dough, deflating it). Divide the dough into small pieces like 70/80gr each (2.5 to 3 oz each)
11. Shape the small buns: put a small part of dough and then spread the dough and put in the middle a little bit of pearl sugar or chocolate chips and then bring the edges in the middle until you made a small bun —> do it all again until you use all the dough, normally you can do between 12-14 brioches
12. Cover your buns with a towel and let them rest for 1 hour
13. Mix the egg yolk with a little bit of milk and brush on the buns
14. Sprinkle the pearl sugar or chocolate chips on top
15. Put the buns in the oven at 180 celsius (350 F) for 15/17min
