French Lemon Tarts are so iconic and there are many recipes and versions. At French bakeries, you can find Lemon Tarts decorated with meringue, or chocolate, like “Citron” chocolate piping. Most French recipes call for lots of cold butter, egg yolks in addition to whole eggs and other ingredients, and the result is absolutely delicious but a bit too rich for me. Therefore, this version has no butter at all, and the right balance of sweet & tart tastes, and the texture is creamy. It has always received many compliments!
French Lemon Tart
Equipment
- mixing bowl, whisk, spatula, measuring cups, pie plate
Ingredients
- 4 Organic lemons
- 5 Eggs
- 3/4 cup Sugar
- 4 oz Heavy Whipping Cream
- 1 Pie Shell
Instructions
- Preheat oven to 400F
- Bake the pie shell for 10 minutes – Remove and let cool
- Reduce oven temperature to 325F
- Wash the lemons well. Zest the 4 lemons, and juice them to obtain 6 fl. oz juice
- Beat the 5 eggs well, add 3/4 cup sugar, mix well. Add the 4 oz cream, blend well. Add the lemon juice and zest. Mix well.
- Pour 1/2 the batter into the cooled baked pie shell. Transfer to a baking tray and into the oven. Pour the remaining batter into the pie shell (to avoid spilling while placing the pie in the oven).
- Bake for around 30 minutes until set – It can be a little jiggly in the center.
- Remove and cool – Serve at room temperature.
This French lemon tart tastes so fresh, light and summery and can be enjoyed on its own. Don’t worry if there are little cracks on the surface. You can dust with some powdered sugar on top, or better yet, decorate with sliced strawberries… This tart is delicate and should be enjoyed immediately. You can bake it ahead of time, and once it’s completely cool, and before decorating, wrap it in double layers of foil and freeze it. It’s better to defrost overnight in the refrigerator, decorate with strawberries or dust with powdered sugar before serving.
